Cauliflower Mac and Cheese

Ingredients
6 cup Cauliflower, raw 1/4 cup of diced yellow or white onions. 3 tbsp Butter, unsalted 4 tbsp Low fat cream cheese 1 cup Kraft Finely Shredded Sharp Cheddar Cheese 1/4 - 1/2 cup Half and Half Cream 1/4 tsp Dijon Mustard 1 tbsp Parsley, dried 1 tsp Garlic
Directions
Dice onions
Cut or break raw cauliflower into bite size chunks
In a warm pan melt butter, add onions and garlic - cook until the onions are tender.
Add cauliflower and cook until semi soft. You can add chicken stock or water to help the process, but let the liquid drain off or evaporate.
Once complete add the vegetables to an 8 x 8 pan
Use the fying pan to prepare the cheese sauce.
Start by adding 1 tblspn of butter, 4 oz of cream cheese and 1/4 cup of half and half and 1/4 tspn of dijon mustard. Mix until the cream cheese is melted then added half of the shredded cheese. Continue to mix over medium heat until completely melted.
Before adding the cheese sauce to the vegetables add parsley and mix well. Incorporate the cheese mixture while still hot. Sprinkle shredded cheese on top and bake at 350 degrees for 10 -15 minutes until the cheese is melted and crisp.
