salmon cakes

Ingredients
2 cans salmon drained2 egg whites1 tsp dill1 tsp lemon pepper1/2 cup bread crumbs or crushed corn flakes
Directions
1. Drain salmon and remove pieces of skin and bones.
2. Mix together salmon, spices, egg whites and 1/4 cup of bread crumbs.
3. Use 1/4 cup measure and shape into patties.
4. Gently coat patties in remaining 1/4 cup bread crumbs
5. Bake at 450 degrees for approximetely 5-8 minutes each side.
6. NOTE: these are fairly fragile and can fall apart easily.

    I thought it was good I liked the floavor of the dill yet I could still taste the salmon. Unlike alot of these that the salmon flavor gets covered by everything else. - 2/13/09
