Chicken and Yellow Rice with Veggies

Ingredients
1 - 1.5 pounds boneless skinless chicken thighs1 10oz package yellow rice1 package frozen peas and carrots (or just peas)2.5 cup (8 fl oz) Chicken Broth Salt, pepper, and poultry seasoning to taste
Directions
Cut chicken into bite size pieces.
Season with salt, pepper, and poultry seasoning.
Saute in pan until cooked through.
Add chicken broth and bring to a boil.
Add rice. Stir while boiling for one minute then reduce heat to simmer.
Cover and cook for twenty minutes.
When rice is nearly done cook frozen veggies according to package directions.
Stir veggies into finished chicken and rice.
Serve
