Creamy Wild Rice & Mushroom Soup

2 tbsp Extra Virgin Olive Oil 2 cup, sliced cremini Mushrooms1 cup, chopped Onions6 cup low sodium chicken broth (can use veggie broth instead)3 cloves Garlic, crushed1 cup Long Grain and Wild Rice Blend1 Bay Leaf1 tsp Thyme1 cup Light Cream (coffee cream or table cream)
Sautee onions, mushrooms, celery and carrots in olive oil until beginning to soften. Add in crushed garlic and sauté for one more minute. Add in stock, rice and bay leaf. Bring to a boil and then reduce heat to a simmer until rice is cooked (about 25-30 min). Remove bay leaf. Add in cream and thyme. Season with salt and pepper to taste.
