Chicken Parm Baked Ziti

Ingredients
1.5 lbs chicken breast tenders1 cup plain bread crumbs1/4 cup grated parmesan cheese1 teas garlic salt1/2 teas garlic powder1/4 teas ground black pepper1 egg1/4 cup milk2 Tbl extra virgin olive oil1 jar (1 lb. 10 oz.) spaghetti sauce1 lb ziti1/2 grated parmesan cheese1 cup part skim mozzarella cheese
Directions
Mix bread crumbs, parmesan cheese, garlic salt, garlic powder, and pepper. In a small bowl, mix egg and milk. Cut chicken tenders into 1.5 inch cubes. Dip chicken cubes in egg/milk mixture, and then roll in bread crumb mixture.
Heat olive oil over medium heat. Pan fry chicken pieces until browned, approx. 4 minutes on both side.
While chicken is cooking, prepare ziti per package directions until al dente.
When chicken is done, remove from heat and let sit on a paper towel.
When ziti is done cooking, drain and pour into greased (Pam) 9x14 pan. Pour spagetti sauce over pasta, and sprinkle with 1/2 cup parmesan cheese.
Arrange chicken in single layer over pasta. Sprinkle mozzarella cheese over chicken, and bake in 350 F oven for 25 minutes or until heated through and cheese melted.

Makes 8 servings.

    Really good. I made this for dinner last night. Instead of pan frying the chicken I baked it in the over at 375 for 20 minutes, turning in between. I also used more sauce than was called for. It was delicious and I would make again - 11/1/10

    This was awesome. Hubby and kids loved it as well. Omitted the olive oil and baked the chicken at 350 for 15 minutes on a "Pam'd" cookie sheet. I haven't really fried anything since starting Spark. I wonder how many calories I saved by not using oil... - 6/2/10

    I cut the sodium a little by just using garlic pwdr. Parm cheese is pretty salty itself. I also broiled the chic instead of frying it. Very good! LARGE serving. Was very full w/ just 1 serving and some cantaloupe. - 4/22/10

    Exellent! In my version I used egg whites/fat free milk for the wash, added Italian seasoning to the crumbs, and eliminated the oil by putting the chicken chunks on a cookie sheet, spraying lightly with Pam and baking. I also added more sauce after reading reviews. Great recipe!! - 10/26/09
