Ingredients
5.0 serving egg whites (for omlet - 1 serving = 1 eggwhite)1.0 serving Eggs - Jumbo Grade A Eggs - California Ranch Fresh - 1 Egg = 1 Serving (63g)1.0 cup Spinach, cooked1.0 serving 1 Med. Green Bell Pepper1.0 stalk, large (11"-12" long) Celery, raw1.0 serving Green Onion (fresh-1 stalk)1.0 cup pieces Mushrooms, cooked1.0 1tsp Olive Oil4.0 oz yogurt Greek Gods Poseidon Greek Yogurt nonfat plain
Directions
Cook vegetables over medium heat till slightly tender. Beat egg whites till fluffy add two tablespoons nonfat greek yogurt. Pour into greased muffin pans cook on 375 for 15 minutes.
