Ingredients
12.0 ounces Chicken Breast (cooked), no skin, roasted3.0 clove Garlic2.0 serving * Barilla Whole Wheat Penne Pasta2.0 serving Lemon juice - of half lemon, 1 Tablspoon (Atkins)0.75 cup HEB 33% less sodium chicken broth
Directions
Sauteed thin cut chicken breast in a saute pan coated with cooking spray. If you only have thick chicken breast , slice them lengthwise so that they are thinner and we'll cook quicker. Once chicken is browned on both sides even if it is not cooked all the way through, remove from pan and set aside. Add three cloves of crushed garlic and sauteed for 30 seconds. Do not overcook or it will become bitter. Add chicken broth and lemon juice and sister. Put chicken back in the sauce and simmer for a few minutes until chicken is cooked through. While chicken is cooking boiled water on the side and cook 4 oz of whole wheat pasta any kind will do. I prefer linguine. Take chicken out of the pan. Pour the sauce over the linguine and toss to coat. Add one of the chicken breasts on top of the pasta and serve. Serving Size: 6 oz of chicken with 2 oz of pasta per serving
