* Onions, raw, 1 medium (2-1/2" dia) chopped Garlic, 2 cloves Quinoa, 0.75 cup 1.5 cups water (or broth) * Olive Oil, 2 tbsp * Sweet Corn, Fresh, 1.5 cup * Beans, black, one can * Cilantro, raw, 1/2 cup * *Cumin 3 tbsp * Pepper, red or cayenne, .25 tsp
1.Saute chopped onion and garlic in oil until soft
2. Add quinoa and water as well as seasoning, simmer for about 20 minutes until most liquid is gone
3. Add in corn, cook for 3 more minutes until done
4. Stir in black beans and cilantro
