Lemon Curd home made

Ingredients
3 fruit without seeds Lemons 200 grams Granulated Sugar 115 grams Butter, unsalted 2 large Egg, fresh, whole, raw 2 serving egg yolk from one raw large egg: approx.2/3 ounces / 17 grams
Directions
Grate the rind then juice the lemons into a bowl. Add the sugar and butter. Place the bow over hot water and stir occasionally until the butter melts. Add the eggs and stir continuously until the mixture thickens and will coat the back of the spoon. Put into sterilised jars. Makes about 1 and 1/4 jars.
