Bagel Breakfast Sandwich with Summer Sausage, Swiss Chard, Egg Whites and Extra Sharp Cheddar Cheese

Ingredients
1 serving Simple Truth Organic Bagel Plain 1 cup, spring mix greens or chopped chard1 oz Olympia Provisions Summer Sausage 2 serving Egg white, large 1 Oz Tillamook Medium White Cheddar Cheese .5 serving Annie's Naturals Organic Ketchup, 1 Tbsp
Directions
Dice a 1oz piece of summer sausage, dice it. Place the sausage and all of the greens, in a non stick skillet or cast iron pan and cook until greens are wilted and sausage is sizzling hot.

Whisk the egg whites well until frothy and add them to the greens and sausage in the pan and cook until set, pushing towards center gently and turning once or twice.

Top the eggs with the cheddar cheese and cover for about 2 or 3 minutes until cheese is melted. Meanwhile toast the bagel and then dash a little ketchup on it.

Top with the egg and enjoy!
