Baked Tortellini with Italian Sausage

Ingredients
1 Lb Italian Sausage, pork 1 Medium Zucchini 12 Medium Mushrooms, fresh 1 Cup, chopped Onions2 Clove Garlic 2 Tins Italian Stewed Tomatoes 2 Cups Cheese Tortellini 1/2 Cup White Wine 2 Tsp Oregano, ground 2 Cups Mozzarella Cheese, part skim milk 1/4 Cup Parmesan Cheese, grated 2 Tbsp Extra Virgin Olive Oil
Directions
Remove casing from sausage, chop and fry over medium heat until browned. Remove and place in casserole with tortellini and zucchini.

Fry mushrooms, onions and garlic for about 5 minutes in olive oil. Stir in tomatoes wine and oregano. Pour over casserole.

Remove cover. Sprinkle with parmesan, cover dish and bake at 375 for 15 minutes. Stir ingredients to blend and top with mozzarella cheese and bake for an additional 25 minutes
