Made this last night and used it in the Chicken Enchilada Casserole recipe submitted by Pollygidalgo. Great pairing! The sauce was perfect (will have to make two batches of it next time however there was not enough sauce for the enchilada's in my opinion). Took pics and blogged about it today. - 1/2/10

I also used it with a chicken enchilada casserole. I was looking for a low sodium version, and this is simple and taste wonderful, I wouldn't change a thing. - 1/17/10

This was great and way easy to make! It was not as spicy as I hoped, so next time I'll have to add a little somethin, somethin! Who knew I could make enchilada sauce? - 1/16/09

I made this last night to go with the chicken enchilada casserole by paperoses2182. Was very tasty and I liked that it was a better version than what you can buy in the stores! - 4/4/13

YUMMY! Chomping on enchiladas using this sauce and wow! Flavorful satisfying and a keeper for sure. I did not even use the optional tsp of salt and this still has lots of taste. Thanks so much for sharing this recipe! - 7/13/12

Delish with homemade cheese and onion enchiladas. Made 8 6"-inch corn torillas and this was just the right amount of sauce. Thank you! - 2/27/11
