Hash Brown Quiche

3 cups frozen hash browns (thawed)2 Tbsp. butter (melted)1/2 cup 1% cottage cheese3/4 cup Mozzarella cheese10 oz spinach (fresh or frozen, chopped)4 eggs (beaten)1/4 cup milk1/2 tsp. salt1/4 tsp. pepper
Combine hash browns and butter in a greased 9-in. pie plate. Press onto the bottom and up the sides, forming a shell. Bake at 425 degrees for 25 minutes. MIx remaining ingredients in a bowl, and pour over hash brown crust and return to oven at 325 degrees for 40 minutes, or until knife into center comes out clean.
