Ingredients
1 cup, chopped Onions, raw 4 Serving(s) Beyond beef sausage 1 cup Tomatoes, red, ripe, canned, whole, no salt added 0.5 cup Parsley 1 fl oz Lemon Juice 1 serving Beans, Kidney beans dark red 3 serv can 4 clove Garlic 4 cup Vegetable Broth 0.5 cup Parmesan Cheese, grated 4 cup, chopped Kale
Directions
Sauté the onion in oil until translucent; add chopped garlic; add â€Å"sausage” and cook a few minutes; add tomato, broth and beans and simmer 5-10 min; add kale and cook until wilted; remove from heat and add lemon juice and Parmesan cheese; taste and add salt as needed; serve with grated Parmesan cheese on top. Serving Size: 12
