Vegitarian Lentil Burgers

3 cups cooked black lentils4 large eggs1 medium onion, finely chopped1 cup toasted bread crumbs1 tablespoon EVOO
Combine lentils & eggs in food processor. Puree until the mixture is consistency of a runny yet textured hummus...its ok if lentils stay whole. Pour into bowl and stir in the onion. Add the bread crumgs, stir and let set for a few minutes so crumbs will absorb some moisture. You should have a very moist mixture that you can now form into twelve 1 1/2 inch thick patties.
*if to moist at more bread crumbs
*if to dry add more egg or water
Heat oil in heavy skillet over medium low heat and cook 7 to 10 minutes until the bottoms brown. Flip and cook second side for 7 minutes , or until golden bronw. Remove from heat and cool on wire rack. You can also cut patties in half to insert your favorite fillings.
Patties can be shaped and stored in frige for up to one week!
