French Onion Chicken

Ingredients
32 oz onions, raw, purple/red (1 slice) 900 grams Chicken Breast, no skin, fried 2 cup Beef broth, bouillon, consomme 1 cup, shredded Swiss Cheese 0.333 cup Olive Oil 0.10 cup Flour - Gold medal all purpose flour 0.666 tbsp Balsamic Vinegar 0.5 tsp Thyme, fresh 1 tsp Sage, ground
Directions
Preheat oven to 350
Heat oil in pan or skillet over medium heat.
Add onions, season w salt and cook, stirring for 15-20 minutes until caramelized
Add vinegar - cook another 3 to 5 until darkened, but not burned
Remove onions from heat & transfer to medium bowl
Heat remaining olive oil in skillet @ medium-high
Season chicken with salt, pepper, thyme & sage. place in skillet and sear on both sides until golden brown.
Remove chicken from heat and set aside.
Pour beef broth into skillet and bring mixture to a boil.
Return heat to medium-low and whisk in flour, stirring until smooth. Cook for 5-7 minutes, or until mixture has thickened.
Return chicken & onions to pan, stirring together w/ beef gravy, top with grated swiss cheese.
Transfer skillet to oven and cook until cheese is melted, and chicken is cooked through.
Remove from oven and serve hot.
