Smoked Salmon Linguine

1 (16-oz) pkg whole grain linguine1 onion, thinly sliced2 Tbsp olive oil3/4 cup creme fraiche (or use cream cheese)1 lb smoked salmon, coarsely chopped3 Tbsp drained capers1/4 cup chopped fresh parsley
Cook pasta according to package directions; drain, reserving 1/2 cup pasta water. Meanwhile, cook onion in hot oil in a large skillet over medium heat 6 minutes or until almost tender. Toss pasta, reserved pasta water, and creme fraiche with onion until blended. Cook 1 to 2 minutes or until slightly thickened. Fold in salmon and season with salt and pepper to taste. Serve topped with capers and parsley.
