Egg Foo Yung Pita Sandwich

Ingredients
2 oz shrimp, chopped (if you use chicken instead, increase calories by approx 50 calories)1 Tbsp onion, chopped1/2 C (approx)Chop Suey Vegetables1 egg1 tsp sesame oil1/4 Tbsp soy sauce1 small whole wheat pita (4")1-2 slices tomato1/4 Tbsp fat free mayonnaise
Directions
Cook chicken with onions until chicken is done. Add drained vegetables and stir to combine. Mix egg with salt and pepper,sesame oil, and soy sauce. Add the meat and vegetable mixture to the eggs and stir well. Heat a skillet with a bit of oil ( or use non-stick spray). Add the vegetable/egg mixture. Cook until eggs are set, flip and cook on the other side. Add mayo to pita, place patty and tomato slice in pita. Enjoy.
