Ingredients
1 cup Coconut milk (light) 1 head, medium (5-6" dia) Cauliflower, raw 1.5 cup, chopped or diced Broccoli, fresh 4 medium (2-1/4" to 3-1/4" dia.) Potato, raw 100 grams Cilantro, raw 1 cup, chopped Onions, raw 5 clove Garlic 2 tbsp Extra Virgin Olive Oil
Directions
Cook vegetables, coconut milk, and curry powder on stove until the vegetables are tender. Serve over rice and add fresh cilantro.
