Ingredients
2 cup dry Oatmeal (plain) 1 tsp Baking Powder .25 tsp Salt (table) (by CYNDYY1) 1 tsp Cinnamon, ground .25 cup, packed Brown Sugar .5 cup, halves Apricots, dried 1 tbsp *Flax Seed Meal (ground flax) .25 cup Happy Planet Oat Oatmilk Original (by KRISTALANDERSEN) 1 tsp Vanilla Extract .25 cup Peanut Butter, smooth style, with salt
Directions
Grind oatmeal as fine as possible. Make flax egg by mixing flax with 3 Tbsp water and let sit 5 min. Puree apricots. Combine oatmeal, bp, salt, and cin. Cream pb, pureed fruit, and sugar. Mix in milk , flax egg,and VE. Add dry ingredients in increments until thoroughly combined. Sprinkle cin sugar on top. Bake at 350 for 10-12 minutes.
