Modified Banana Muffins

Ingredients
4 extra small Bananas (less than 6” long) 1/4 cup Milk, nonfat (skim milk) 3 tbsp unpacked Brown Sugar 1 tbsp Ground Flaxseed Meal1 1/2 tsp Vanilla Extract 1 medium Egg, fresh, whole, raw 1 3/4 cup Whole Wheat Flour 1 1/2 tsp Baking Soda 1/4 cup (2 fl oz) Water, tap 1/4 cup Coconut Oil 4 tbsp Milk Chocolate Chips 1 tsp Salt
Directions
Mash ripe bananas with fork, then add all remaining ingredients to bananas, adding the chocolate chips last. Mix well. Spray muffin pan or muffin baking cups with cooking spray and use 1/4 cup mixture of batter per muffin cup. Optional: sprinkle raw oats on top for garnish Bake for 20 mins at 375 Farenheit. Serving Size: makes 10 muffins
