Zucchini Pancakes (or Yellow Squash)

Ingredients
4 small zucchini2 whole eggs, slightly beaten1/4 cup floursalt and pepper to taste
Directions
Cut off ends of zucchini but do not peel. Grate coarsely. Add eggs and flour and mix well. Season with salt and pepper. Fry in a skillet with a small amount of oil or shortening, pancake size, until brown on both sides.
