Summer Antioxidant Salad

Ingredients
2 cups kale, chopped into bite size pieces2 cups fresh spinach1 cup fresh broccoli florets, chopped1/2 cup raw onion (preferably sweet), chopped1 cup celery, chopped1 cup carrots, julienned2 cups fresh sweet apple, chopped1 fl. oz. lemon juice (sprinkled and tossed with chopped apples)1 cup raisins1 cup sweet cherries (preferably fresh), pitted and halved1/2 cup seasoned rice vinegar or other salad dressing1 cup seasoned croutons1 cup shredded cheddar cheese or other kind if preferred
Directions
Toss together apples and lemon juice in a plastic container; place in refrigerator until ready to serve salad.

Place cherries in another container and place in refrigerator until ready to serve.

Toss together in a large bowl the kale, spinach, broccoli, onion, celery, and carrots. Add the raisins and dressing; toss again.

When ready to serve; gently toss in the apples, cherries, cheese, and croutons and place in salad bowls. Enjoy!

    I modified this a little bit just to fit what I had in the fridge and used romaine and grapes instead of the spinach and cherries. It's a beautiful, filling salad that I would be proud to serve to company. - 7/6/12
