3 cup Gold Medal Unbleached All Purpose Flour (by JCHLLM) 2 cup Whole Wheat Flour 1.75 cup (8 fl oz) Water, tap 2 tsp Salt 6 tbsp Butter, salted .33 cup, packed Brown Sugar .25 ounce Yeast, bakers
Heat butter, salt, water, and brown sugar to 120 to 130 degrees. Meanwhile, add 2 cups unbleached flour and yeast. Add liquid and mix. Stir in 2 cups wheat flour. Add as much remaining unbleached flour as needed to make firm ball. Dump onto floured surface and knead. Place into oiled bowl and cover with warm, damp towel. Allow to rise 1.5 hours. Punch down, form 2 loaves, place in bread pan and allow to rise another 45 minutes to an hour. Bake in 425 degree oven for about 50 minutes.
