whole wheat spaghettibell pepperoniondiced tomatobroccolimushroomsgarbanzo beansedamameroasted sesame seedsroasted almonds (or cashews)red pepper flakesgarlicsaltsoy sauce (optional)
first roast sesame seeds, almonds (or cashews) & red pepper flakes until golden (your nose will know when they're ready). remove from pan, add oil until hot, then add garlic, peppers & onions. while they are cooking, get water boiling for spaghetti (or any pasta of your choice). then add mushrooms, broccoli & edamame (can cook both ahead of time), & tomatoes to skillet. When pasta is ready (about 10 minutes to al dente) add to skillet. season with salt & pepper to taste. makes 2 - 1.5 cup servings.
