John's Panko & Parmesan Crusted Sea Scallops

Ingredients
Pam Olive Oil spray0.25 tsp Kosher Salt .25 tsp Pepper, black 1.5 tbsp Lemon juice 1.5 tbsp chopped Shallots 1/4 cup Panko Bread Crumbs, Panko (Japanese style) 1 tbsp Parsley 3 tbsp Parmesan Cheese, grated 3 tbsp Promise, Light Margarine 8 large Raw Sea Scallops
Directions
Preheat oven to 425.
Spray the bottom of a 8 inch square baking dish with the Pam.
Pat scallops dry and arrange in a single layer in the dish.
Sprinkle the scallops with the salt and pepper.
Melt 2 TBL of the Promise and combine with the lemon juice and shallots and pour over scallops.
Melt the remainIng 1 TBL of Promise and in the same bowl combine with panko and parmesan. Sprinkle evenly over scallops.
Bake for approx 10 to 15 minutes until the scallops are opaque and topping is golden brown. Scallops should reach 135 - 145 degrees.
