1.5 cup slices Cucumber (with peel) 4 serving Tomatoes, Roma small (2-2.5" diameter; whole) .5 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers) .66 cup Parsley 1 serving Green Onion (fresh-1 stalk) .66 tbsp Extra Virgin Olive Oil .66 serving Lemon juice - of half lemon, 1 Tablspoon (Atkins)
Directions
Toss all ingredients together. Salt and pepper optional.
