Homemade Basil & Parsley Pesto

Ingredients
4 cups fresh Parsley 2 cups fresh Basil 1.5 cups Parmesan Cheese, shredded 2/3 cup Pine Nuts 1.5 cup Olive Oil 1/2 tsp Salt 6 cloves Garlic, minced
Directions
1. Pulse basil, parsley and pine nuts in a food processor.

2. Add the garlic and cheese and pulse again. Use a spatula to scrape down the sides of the bowl.

3. Slowly stream in the olive oil while the food processor is running. Occasionally, stop and scrape down the sides again.

4. Stir in salt.

5. Toss with pasta, dollop over baked potatoes or spread onto crackers or toast.

Serving Size: Makes 3 cups.
