Jalapeno Tilapia

Ingredients
16 oz Tilapia filet, raw 1 pepper Jalapeno Peppers 8 cup Squash - Yellow and Zucchini 1 cup, chopped Onions, raw 1 cup, pieces or slices Mushrooms, fresh 2 clove Garlic 1 tbsp Extra Virgin Olive Oil 4 grams Corn Starch 1 cup Trader Joe's Coconut Milk Beverage - Unsweetened 2 tsp Salt 1 tsp Pepper, black 1 lime yields Lime Juice 1 cup, chopped or sliced Red Ripe Tomatoes
Directions
1, with a fork, whisk 1Tbs oil and lime juice on lg plate, add fish and turn over to coat.
2, Heat remaining oil in 12 in skillet over med heat. Add onion, garlic, peppers and mushrooms. Cook for 6 min until onions are translucent and peppers are tender.
3, Sprinkle salt over fish and place in skillet. Pour coconut milk over fish and add tomatoes. Reduce heat to med-low and simmer for 8 min turning fish after 4 min.
4, Combine corn starch with water and add to dish to thicken.
5, stir remaining salt and sauce and serve Hot.

Can serve over Angel Hair Pasta or Zucchini pasta.
May add a splash of Hot sauce for taste.

Spiral cut Zucchini Pasta, cook in frying pan with olive oil on high heat and season anyway you like for 2 to 3 min and pour the Jalapeno Tilapia over Zucchini.
