New Mexico Green Chile Sauce

1 tbsp of canola oil half a large onion, diced3 chopped garlic cloves1/3 cup of flour2 tbsp of ground cumin 1 tbsp onion powder1 tbsp garlic powder1 tbsp salt (can be adjusted to taste) 2 cups chicken broth2 cups of canned green chiles (may be called chillis in some markets)
Start by heating canola oil in a large sauce pan over medium heat. When it shimmers, add the onion chopped garlic cloves. When the onion starts to become translucent, add the flour, ground cumin, onion powder, garlic powder, salt . Cook until the flour has browned. Add chicken broth, and whisk to mix in the flour. Bring to a boil, and then add the canned green chiles. Stir and allow to simmer until thick. Test thickness by dipping a spoon in the sauce, and then running your finger across it. If the sauce leaves a clear line where you wiped, the sauce is ready.
Can be poured over almost any Mexican dish, but is really good over a tortilla and cheese, or with tortilla chips when warm.
Makes 8 servings of slightly less than 1/2 cup.

Green Sauce is made from tomatillos not green chilis. I would suggesrt not using this recipe to make green sauce. Email me for the "real" green sauce recipe. - 8/1/07

So you are the only one who knows how to make green sauce? Ever think about how the recipe changes depending on where you are? There is a reason this is called "New Mexico" green sauce - because that is how we do it there, at least in the south.
