Healthy Peanut Butter Muffins

Ingredients
1 1/2 c flour1/2 c oatmeal2 tsp baking powder2 tbs flax seed, ground1/2 tsp salt1/2 c sugar1/3 c applesauce1/2 c egg sustitute1 c reduced pat peanut butter1 c 1 % milk6 tbs jam
Directions
Preheat oven to 375 degrees. In a large mixing bowl, blend flour, oatmeal, baking powder, flax seed, salt, sugar. In another bowl, blend applesauce, egg substitue, peanut butter and milk. Add this mixture to dry ingredients. Spray muffins pans with cooking spray. Fill muffin pan approx 1/4. Top with 1 tsp jam. Place another 2 tbs mixture on top of jam. Bake approx. 20 min.
Makes 12 muffins.
