1/2 Tbsp. olive oil1/4 cup red bell pepper, thinly sliced1/4 cup onion, thinly sliced1 clove garlic, minced1/2 Tbsp. wine 15 oz. can diced tomatoes1/8 tsp. pepper6 oz. dry farfalle (bow-tie) pasta1 Tbsp. grated Parmesan cheese1/2 tsp. dry basil
Heat oil over medium-high heat. Add pepper, onion and garlic, and cook for 5 to 7 minutes, stirring occationally, until vegetables are crisp-tender. Stir in wine. Cook uncovered until liquid evaporates.
Stir in tomatoes and pepper. Bring to a boil; reduce heat and simmer on low for about 45 minutes, stirring occasionally.
Cook pasta according to package directions. Drain and pour into serving dish. Pour sauce over pasta; sprinkle with cheese and basil and serve.
Makes 4 side servings or 2-3 main dish servings.
