Ingredients
1 16-oz bag frozen, shelled edamame1/2 cup dried cranberries1/4 cup fresh basil leaves, chiffonade (sliced into thin strips)1 Tbsp. olive oil1/8 tsp. freshly ground black pepper1/2 cup reduced-fat feta crumblesSalt to taste
Directions
Bring small pan of water to boil and remove from heat. Put cranberries in water and let sit for 5 minutes to rehydrate. Drain well, removing as much water as possible (I squeeze lightly in paper towels) and set aside.

Cook edamame in boiling salted water for 5 minutes. Drain and rinse under cold water to stop cooking. Pat dry.

Toss edamame, cranberries, basil, olive oil and pepper together. Add salt, if desired. Gently stir in feta cheese. Serve chilled or at room temperature. Serves 4.

This recipe is light and refreshing and very healthy! It also keeps for a few days in the fridge too, still tasting fresh each day. - 8/12/11

Yum! Thank you for sharing --- it was just the right light, refreshing lunch for a hot summer day (the fresh basil from my garden was put to great use!) :) - 6/18/11

This sounded intriguing, I had only recently discovered edamame and I love craisins. The textures and flavors combine beautifully... definitely a keeper

This is very good. This is my first time trying edamame, and I chose this recipe because I love feta and also always have dried cranberries on hand. I'm happy to say it tasted as good as the recipe sounded, and it was so easy to prepare! Thanks. - 2/9/09

This is lovely. As an added bonus I kept the water the cranberries had soaked in and added it to my breakfast oatmeal the next day for some low-calorie extra flavor. - 9/12/12

What a great addition to summertime side dishes! I've shared it with lots of folks, and everyone loves it either alone, or on top of a salad. One friend added garlic and a bit of chopped red onion, and that was good too. - 6/15/10

Fabulous!! I used whole fat feta 2 oz....which is pretty low to compared to other cheese out there. Used only a half tablespoon of olive oil. The servings looked small but wound up being very filling. I will Absolutely make this again :) - 6/9/10
