Pork Chops with Rice

Ingredients
6 lean pork chops4 carrots, medium1 c cauliflower1 c broccoli1 bell pepper2 c uncooked ricesalt and pepper to tasteCajun seasoning to taste
Directions
Cover bottom of 9x13" baking dish with uncooked rice. Slice carrots and bell pepper, break cauliflower and broccoli into small pieces. Put vegetables into dish evenly over rice. Lay pork chops on top of rice and vegetables. Sprinkle with cajun seasoning, salt and pepper to taste. Add approximately 1" of water (enough to completely cover rice.) Cover with foil and bake at 375 degrees approx 60 minutes or until rice and vegetables are tender.

Makes 4 servings.

    I'm confused- it says it serves 4 but there are 6 porkchops. Do you serve everyone 1 and 1/2 porkchops?? Seems odd but maybe that is jut me, LOL - 8/2/08

    I have found that most of the time, a single pork chop does not give you the full 3 oz. Especially if you only consider the loin portion of the pork chop. If you use larger or thicker pork chops, then the # servings may indeed be 6.

    could you edit the recipe to say 4 servings over the nutrition info (you have to tell spark people how many servings when you calculate the nutrition info or it doesn't show accurately), so it reflects the nutrition per serving? Thanks. - 8/2/08
