Spicy Halibut Stew

Ingredients
1 pound large shrimp1 pound halibut fillet1 medium lime, (cut in half)1 tsp coriander3 Tbsp Olive Oil2 large onions, diced2 large Celery stalks, diced2 medium carrots, diced1 can plum tomatoes1 XL large vegetable (or chicken) bouillon cube1/2 cup white wine2 tablespoons fresh parsleyCrushed red pepper (to taste)Salt(to taste)
Directions
In large bowl, combine shrimp and halibut (cut halibut into 3" by 2" pieces) and juice from Lime. Add coriander and a pinch of salt.

In a pot, heat oil over medium heat and add diced veggies, stirring occasionally for about 25 minute or until tender and browned.

Stir in the tomatoes with the juicebouillin cube and white wine and crushed red peppers. Raise to high heat till it's boiling over.

Makes 10 servings.

Reduce the heat to medium and continue to cook for about 5 minutes. Stir seafood mixture in and stir occasionally until seafood is opaque. At the end, stir in parsley.

    Really good! I made a few adjustments - I wanted a little more broth to the stew, so I added about 2 cups of vegetable broth. I'm also a heat junkie, so I used a can of diced tomatoes/jalapeno peppers for an added kick. I also added 2 cups of spinach for some extra veggies. - 2/6/12
