Pepper Crusted Tuna with Lemon Spinach

Ingredients
2 tablespoons olive oil1 teaspoon salt1/4 teaspoon pepper4 6oz Tuna Steaks (3/4" thick)2 teaspoons whole black peppercorns crushed1 tablespoon fresh thyme2 shallots, cut into rings1 10oz package fresh spinach1 lemon quartered
Directions
Heat 1 tablespoon of olive oil in large skillet over medium heat. Sprinkle tuna with 1/2 teaspoon of salt, the crushed peppercorn, and thyme. Cook turning once to desired done-ness (2 to 3 minutes per side for medium rare). Put tuna on individual plates. Wipe out the skillet heat 1 tablespoon of olive oil over medium heat. Add the shallots and cook 2 minutes. Add the spinach, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until wilted. Serve with Tuna and lemon wedges.
