Ginger Lime Simple Syrup

Ingredients
2 stalks Peppermint, fresh5 slices (1" dia) Ginger Root4 tbsp Lime Juice, juice of 2 limes & zest1 cup swerve sweetner1 cup Water, tap3 Lime Leaves (optional) 1/2 cup Ice to cool
Directions
Add water and fruit zest, lime leaves, peppermint stalk & Ginger into pot with water bring to boil. Simmer 5 mins. Let steep 1 hour. Strain. Add tea back to pot bring to simmer add 1 cup swerve or equivalent sugar. Stir to combine. Add Ice to cool down. Store in squirt bottle.
