Step 1:1 15 oz. can black beans with liquid1 15 oz. can white beans with liquid1 10 oz. can diced tomatoes with green chilies with liquid1 4 oz. can sliced mushrooms, drained½ medium onions, diced2 large carrots, chopped2 stalks celery, diced1 clove garlic, minced½ green bell pepper, chopped½ red bell pepper, chopped½ tsp. salt½ tsp. pepper1 tsp. cuminStep 2:2 lbs. chicken drumsticks, skin removed (~6 drumsticks)1 Tbsp. Step 1:
Combine all ingredients in slow cooker, except for the chicken and flake spices. Add seasonings to taste and mix well.
Step 2:
Place skinless drumsticks on top of the bean mixture and season with Adobo seasoning first, then liberally season with thyme, parsley, and tarragon (or whatever other seasonings you prefer).
Cook the beans and chicken on high for 3-1/2 to 4 hours or until the chicken is done to your liking.
Serving Size: One chicken leg and 1 cup of the bean mixture.
