Ingredients
2.0 1tsp Olive Oil1.0 medium Carrots, raw1.0 medium whole (2-3/5" dia) Red Ripe Tomatoes2.0 cup Bob's Red Mill Organic Whole Grain Quinoa (1/4 C dry = 1/2 C)0.5 cup Green Beans Raw
Directions
Cook quinoa. Add chopped vegetables and olive oil. Season with salt, spices and lemon juice. Mix. Serve Note: can add a drained can of beans or any other diced vegetables to it. Small cubes of cheese are also optional. Serving Size: Makes four servings
