Fluffy flourless Peanutbutter Cookies

Ingredients
1 Banana, very ripe (½ cup mashed)½ cup Peanut Butter 1 large Egg1 cup Almond meal/Almond Flour½ tsp Baking Powder½ tsp Baking SodaPinch of Sea Salt, to taste
Directions
1. Pre-heat oven to 375°. Cream banana, peanut butter, and egg together. 2. Sift dry ingredients together, then mix with wet ingredients. Should resemble chocolate chip cookie batter. *If too moist, add additional Almond Meal 1 Tbsp at a time. If too dry, add additional peanutbutter 1 Tbsp at a time. 3. Drop rounded Tablespoons of batter onto an ungreased cookie sheet. Bake 9-11 minutes until lightly golden brown and browned. Be sure to check bottoms of cookies for browning and remove before burning. Cool on cooling racks. ** I eyeballed peanutbutter and almond meal. A. I had an amount of peanutbutter roughly equal to mashed banana. B. I had an amount of almond flour roughly equal to the total sum of creamed wet ingredients, banana, peanutbutter, & egg. *** addition of nuts, chocolate chips, or raisins could be excellent. Serving Size: Makes fourteen (14) - 1½ inch cookies
