SCD Baked eggs with cheddar cheese and tomato sauce

Ingredients
1 oz Cheese Dubliner Irish Cheddar3 large EggsSalt and pepper to taste (the cheese is salty)2 tablespoons SCD tomato sauce
Directions
Gently heat 2 tablespoons of tomato sauce on bottom of skillet. (Stick free works best)
Use stick blender to beat the eggs cheese and pepper.
Pour egg mixture on top of tomato sauce. Some mixing will naturally occur.
Place lid on skillet and cook on low heat until eggs are cooked.
