Ingredients
450.0 Grams Eggplant, fresh1.0 cup, chopped Peppers, sweet, red, fresh1.0 clove Garlic3.0 tbsp Parsley1.0 1tsp Olive OilSalt and pepper to taste
Directions
Pierce the eggplants with a fork and MW for 13-15 minutes and remove skins once cool enough
Bake the pepper at high temperature until soft and skin begins to char. Remove seeds.
Chop everything
