Turkey Joes

1.5 lbs ground turkey, lean1 sweet red pepper, chopped fine1 medium onion, chopped fine1 6 oz. can tomato paste1 cup water1 tsp cider vinegar ( or more to taste)3 T brown sugar1 T chili powder ( or more to taste) 1 tsp oregano1 tsp cumin0.5 tsp salt
Coat a skillet with cooking spray. Brown the turkey and drain off any fat. Make sure to keep strirring and breaking up the turkey.
Leave the turkey in the pan and add the vegetables. Cook over medium heat until the vegetables have softened.
Add all of the spices, except the salt. Stir and cook until it is well blended. Add the tomato past and water. Stir to make sure it is all blended.
Reduce the heat to low and simmer until the mixture thickens. Taste and see if you need to add the salt.
Serve on hamburger buns with extra napkins.
