Cream Cheese Pancakes

2 ounces Cream Cheese, softened1 large egg1 tsp vanilla extract1 tsp SplendaDash of cinnamon1 tbsp butterDash of cinnamon
Makes 1 serving.
Mix cream cheese, egg, vanilla, splenda and cinnamon together in a bowl until blended. Heat griddle over medium heat and spray with non-stick spray. Pour small amount of butter on grill, cook 3-4 minutes. Flip carefully with spatula and cook 3-4 more minutes. Transfer to plate.
To make syrup, melt 1 tablespoon of butter in the microwave. Add a dash of cinnamon. Pour over pancakes.

I kinda winged this recipe on my own just to make a single serving because noone in my fam was brave enough lol. I used too much vanilla and maybe should have had more cream cheese... but these weren't bad. It almost reminded me of a taste of flan.I might put cot chs on top next time. - 1/25/11
