Yummy Low Fat Zucchini Bread

egg substitute: 3/4 cupapplsauce: 1 cupgranulated sugar : 2 cupsSHREDDED zucchini: 2 cupsvanilla extract: 1 tablespoonbaking soda: 1 teaspooncinnamon: 1 tablespoonnutmeg: 1 teaspoonsalt: 1 teaspoonflour: 3 cups
Mix in order. Bake in small greased & floured loaf pans @ 350 degrees for 30-35 minutes. Makes 4 small loaves cut into eight slices each. One serving=1 slice.

This was an easy recipe that consisted of things I usually keep on hand. Very moist and flavorful for being healthy! My husband gobbled it right up..didn't tell him there were veggies in it! I will try to decrease the sugar next time by using part sugar and part sugar replacement. Very good though! - 9/30/08

This was good. I used 1 egg cause i didn't want to mess with figuring the egg replacer. Funny thing: i forgot one of the cups of flour so i made another batch! I have 4 mini pans that are attached so i made one with chocolate chips, one plain, one w/cranberries & walnuts and the last w/blueberries - 8/27/10
