Vegetable-Packed Guacamole

Ingredients
2 avocados 1 lemon, juiced2 T chopped cilantro (leave out if you don't like cilantro) 1 small tomato (plum or roma)1 jalapeno, seeds and white ribs removed (that's where most of the heat is)1/2 cup chopped green pepper 1 small white onion, choppedsalt and pepper to taste
Directions
Mash avocado and lemon juice with a fork until fluffy and creamy. Chop cilantro, tomato, peppers and onion. Mix well and season with salt and pepper. Allow to rest an hour or so before serving so flavors mix.

    I am lazy. I mash up my avocado and just pour an appropriate amount of salsa into the bowl and mix up. (I like Pace Picante Sauce. ) Done. Tastes great! - 9/2/08

    If you leave the pit of the avocado in the guacamole while it is resting and waiting for you to eat it ... it will not turn brown as fast. - 9/1/08

    I used lime instead of lemon, 2 minced garlic cloves, cracked black pepper, 1/2 tsp. chili powder, only 1/2 the jalapeno, no bell pepper, and 1/2 tsp. crushed cumin seed, all ingredients coarsely chopped instead of mashed and creamy...this made it closer to what I usually make as my standard...yum! - 9/5/08

    i make this with just a few changes, i use lime juice, red onion and leave the seeds in the jalapeno, b/c my hubby and i like the spice. but i never have put in green pepper, i will next time i make it though, upping the tasty veggy quotient sounds like a good way to go! make this if you love guac! - 1/30/09

    Yes - I agree with CONNIER62 - it would be very helpful if the recipes included serving size as well as how many servings. This recipe has 8 servings - but are they 1 tablespoon, 2 tablespoons, 1/4 cup , etc??? Just would be nice. - 6/29/12

    This is a great recipe. Traditionally it should have lime in it, not lemon. Also, leaving out cilantro would be like leaving out the avocado!! I was taught by an old mexican cook how to make guacamole. I agree about vegging it up by dipping extra veggies in it rather then putting them in it. Delish! - 6/19/11

    I like to add extra tomato (makes the color a little off) and lime juice and I find if you press plastic wrap till there's no air left it lasts even overnight in the fridge. - 7/17/11

    I make mine similiar except I add minced garlic as well and put the seed back in to help it from turning brown. I also add pepper, salt, and a littley cayenne pepper. - 10/11/08

    I would leave out the bell pepper, use 2 serranos (instead of jalepeno), 2 vine-ripened tomatoes (seeded), and WAY more cilantro, replace the lemon with the juice from 1 lime. - 8/20/12

    I make this often and love it. Use it for breakfast with scrambled eggs and also with backed potatoes or wrapped in a flour tortilla. Will have to try the veggies for chips. - 7/19/11

    Very good dip! My family all agreed there was too much lemon juice (maybe I had a very large lemon? I will use a smaller one or cut that in half next time. Otherwise, very delicious. - 7/6/11

    Our grocery store has a 'diet,' and 'skinny,' avocado with less fat and calories. The store calls it "Florida Avocado." It is twice the size of the hass avocado, and about twice the price. The taste is lighter and a bit dryer. Thanks sharing the new recipe, can't wait to try it! - 3/17/09
