Pumpkin Oat Bars

Ingredients
3 cups Old Fashioned Oats1 cup Oat Flour 1/2 cup Canned Pumpkin1/2 cup Unsweetened Applesauce3/4 cup packed Brown Sugar16 tbsp (1 cup) Ground Flaxseed1 tbsp vanilla extract1 egg white1 tsp baking powder4 tbsp light butter 1 1/2 tbsp ground cinnamon
Directions
Makes 24 bars from a 9x13 baking dish. Preheat oven to 350, Grease or Spray a 9x13 baking dish.
Mix oat flour, oats, baking powder and flaxseed and set aside. In separate bowl cream together-sugar, butter, vanilla, pumpkin, applesauce and cinnamon. Add dry ingredients stirring slowly until incorporated so as to not break up the oats. Gently pour into baking dish, pressing into corners and compressing into a flat level surface. Bake for 20 min and let cool completely before cutting into 24 bars. Return to oven for 10 or so min to firm up to keep bar shape.
You can also double up the servings and bake in a 12 muffin pan for a 200 cal snack cakebar.
