Stuffed Manicotti Shells (3 shells is 1 serving)

Ingredients
chopped frozen spinach (10 oz. drained)manicotti shells (8 oz. box)fat free mozzarella (1/2 cup)parmesan cheese (1/4 cup)mushrooms, chopped (6 small)garlic, minced (1 clove)marinara sauce (24 oz.. jar)salt to taste egg beaters (1/4 cup)olive oil spray (to sautee mushrooms/garlic)low fat ricotta cheese (15 oz.)
Directions
Cook manicotti shells 7 minutes, drain and rinse in cool water, set aside.
Meanwhile; heat olive oil spray in skillet on medium heat, add garlic and mushrooms,sautee for 5 minutes, stirring occasionally. Stir in spinach, continue cooking for 5 minutes, set aside to cool. In a mixing bowl, add egg beaters, stir in ricotta cheese, salt to taste, stir in mushroom mixture. Spread 3/4 cup sauce on bottom of 9x13 baking dish/pan. Fill manicotti shells with mixture and place in baking dish. Pour remaining sauce evenly over filled shells, sprinkle with mozzarella cheese. Cover with foil and bake for 30 minutes @350, uncover, bake additional 5-10 minutes until cheese melts. Makes 6 servings. (3 shells is 1 serving)
