*Wheat flour, white, all-purpose, unenriched, 0.5 cupWheat germ, crude, 0.5 cup Yellow Cornmeal, 0.5 cupEgg substitute, liquid (Egg Beaters), 0.25 cup Smart Balance, Smart Balance Light Buttery Spread, 1 Tbsp, 4 serving Brown Sugar, 3 tsp packed Granulated Sugar, 3 tsp Baking Powder, 1 tsp Salt, 0.5 tsp Milk, nonfat, 1 cup
Makes 12 servings. Stir together flour, wheat germ, cornmeal, sugar, baking powder and salt. Make a well in the center. Combine egg, milk and melted butter; add all at once to flour mixture. Stir just until moistened; batter should be lumpy. Grease muffin pan or line with paper bake cups; fill 2/3 full.
Bake at 400°F for 20 minutes or until muffins are lightly browned. Serve warm.
