2 lbs lean ground beef8 mission 8" low carb tortillas1 can fat free refried beanshalf small yellow onion2 tbsp chili powder1 tbsp cumin powder1 tbsp onion powder1 tbsp garlic powder1 cup salsa2 cups shredded mexican blend cheese1 can red enchilada sauce.5 cup green onion slices
Brown meat and onions, drain grease. Add seasonings to meat. Layer two tortillas in the bottom of a baking dish, covered with a thin layer of beans. sprinkle a third of the meat on top, then drizzle some of the enchilada sauce and sprinkle some cheese. Repeat this 2 more times (3 layers). Put two more tortillas on top, cover with salsa and another layer of cheese. Garnish with green onion slices on top.
Place in oven at 400 degrees farenheit for 20 minutes or until warm through. Serve with lettuce and fat free sour cream if desired.
